The first Italian's electronic systems managing retarder-proofers

The customer needed to create a solution that would allow to control and block the leavening of the dough through the chemical / physical principles of yeast. The system had to be integrated into an analogical device, intended for the bakery and pastry sector.

To meet this need, Syen was the first Italian company to be authorized to take advantage of a French patent. Syen was the first nationwide company to develop specific electronics for this function.

An aesthetic membrane was applied to the retarder-proving device, designed according to customer specifications. The electronic board allows you to control the leavening of traditional bread preparations and preparations with strong flours (Biga). It also allows you to temporarily stop the leavening process, keeping the dough fresh for longer over time.
